Sheet Pan Halloumi Fajitas

20 minutes, 1 pan and 7 ingredients (+ spices) to make this delicious vegetarian sheet pan halloumi fajitas meal that the whole family will enjoy!

Halloumi stole my heart when I was travelling Greece. It is a brined cheese made from a mixture of goat and sheep milk. It has a high heat point so it is perfect for frying and grilling as it holds it's shape!
Ingredients:
3 bell peppers, sliced
1 can chickpeas, drained
1 brick halloumi, sliced into finger length strips
Fajita spice (see below)
Olive oil
Small tortillas
Optional: chopped tomatoes and avocado (for serving)
Directions:
Preheat your oven to 425.
Make the fajita spice by stirring together 2 tsp oregano, 2 tsp smoked paprika, 2 tsp chilli powder, 1 tsp cumin, 1 tsp ground coriander, and 1 tsp garlic powder.
Place the sliced peppers and drained chickpeas together on a sheet pan. Leaving a gap in the centre for the halloumi
Place the sliced halloumi in the centre of the sheet pan making sure none of the cheese slices overlap.
Drizzle a small amount of olive oil on top of the peppers, chickpeas and cheese.
Sprinkle on all of the fajita spice, rubbing it into the cheese with your fingers.
Place in the oven and cook for 15-20 minutes
Enjoy wrapped in small tortillas with preferred toppings!
